140 g cocoa butter

½ cup coconut oil

80 g cacao powder

1½ cups coconut sugar

6 eggs, room temperature

2 cups buckwheat or almond flour

(Optional) 2 tablespoons maple syrup for extra moisture

1. Preheat your oven to 175°C and line a baking dish with parchment paper.

2. Melt the cocoa butter and coconut oil gently over low heat.

3. Whisk in the cacao powder until the mixture becomes glossy and smooth.

4. In a separate large bowl, whisk together the eggs, coconut sugar, vanilla, nut butter, and salt until slightly thickened and pale.

5. Pour the warm chocolate mixture into the egg mixture and whisk gently to combine.

6. Fold in the flour until just incorporated, be careful not to overmix.

7. Pour the batter into your prepared pan and bake for 20–25 minutes, or until the centre is just barely set.
